They made it harder to backstab. Some enemies you can circle on the right, others left. The Lothric Knights punish you for circling right with a shield bash. Some enemies you have to block them and they have a long deflection time that gives you a moment to backstab. Good luck!

Nobody really tried to hit the enemy with a regular attack. Therefore the fights were usually two people rolling around and into each other.
